Veggie-Rice Pilaf
I love this recipe because it’s quick and usually a good ‘fridge foraging’ recipe for me. It a one pan meal, which I always love too. Super easy. I think I got this recipe from the Tightwad Gazette, but I can’t really remember.
Ingredients
- 1 cup uncooked brown rice
- 1 Tbsp olive oil
- 2-3 cloves garlic
- one small onion (diced)
- 2 cups veggie broth
- 1 can (or equivalent) cooked beans -white, red, black, chickpeas, whatever!
- 1/2 cup veggies*
- seasoning (salt, pepper, etc)
* I use more than 1/2 cup veggies. I usually use 1.5 to 2 cups.
Directions
- Heat oil in skillet. Add garlic & onion and cook until golden, translucent.
- Add beans and cook for a few minutes.
- Add rice and cook a few more minutes.
- Add veggie broth and bring to a boil.
- Add veggies and seasoning of your choice.
- Return to a boil, then reduce to a simmer and cover.
- Cook for about 40 minutes or until liquid is absorbed.
A one-pan wonder and super yummy!
