Vegan Pancake Celebration

Last night we moved our 7 month old’s crib out of our bedroom and into his brother’s room.  He has still been waking up in the night to eat, but I noticed this week that it’s more comfort sucking than actual eating and he falls asleep again quickly after only a few minutes.

We’ve been nervous about moving him in there, for fear that he would wake up Big D…but it needs to happen sometime, before he’s able to stand up and yell for us from across the room.

So, we went for it.  He went to sleep in what is now Big D and Little C’s bedroom.  He woke up after about 4 hours around 10:30 pm.  We changed and fed him, then put him back down, after some rocking by Daddy.

He didn’t wake up again until 4:30 am!!  Woo hoo! Success!

So, we celebrated by making pancakes!  I found this recipe when Big D was still allergic to milk and eggs, but it’s so easy and tasty, that I still use it.

5 Minute Vegan Pancakes

  • 1 cup flour (whichever kind you prefer)
  • 1 Tbsp sugar
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 cup rice or soy milk
  • 2 Tbsp vegetable oil

This recipe serves 2.  I always double it.  I also throw in a Tbsp of ground flax and some fresh or frozen berries.

Combine the dry ingredients in a bowl.  Add the soy or rice milk and oil, mix until smooth.  Stir in berries.  Make your pancakes!  Yummy!
